Instead of rinsing and swelling the barrel w 90 C water post emptying we decided to rack fresh saison on top of the residual yeast inside the barrel from a previous fermentation w Kveik. After 6 months we blended on top of red flesh plums from Rayners Orchard in Woori Yallock @ the rate of 350g L. These were left to interact for 8 weeks. Upon tasting the final product we thought it lacked vibrancy and acidity,
