Both high altitudes and a rich deep soil provide more development time and nutrients to the coffee bean, leading to exceptional results. The coffee is hand picked at maturity by skilful workers to ensure that only red ripe cherries are selected. It is then pulped, fermented for up to 16 hours, and finally dried under the Sun.
