Ex Vero II, 2020 Merch with vinification now taking placeA skin contact beauty with an air of mystery about it. The wine is an equal blend of Chardonnay and Sauvignon Blanc grown on mid slope chalky marl soils, which spend a few days on the skins, before fermentation in wooden vats, and 22 months ageing in the same vessels, and bottling without filtration, fining, or added sulphites. Smoky, tropical, and aromatic, with impressive structure, beautiful tension, and saline minerality on the finish.
