A southerly aspect provides respite from the hot afternoon sun during ripening ensuring that this fruit is the last Grenache harvested with a very long hang time on the vine to produce a very well-developed flavour profile
The wine is fermented naturally in a mixture of old barrels (mostly old barrique & 500 litre) and goes on to spend around 18-month resting in cask before bottling without any fining and having gone through full malolactic fermentation
The fruit holds long until the very back and showcases the quality of the raw materials and leaves the drinker with a decadent

When the perpetual blend reaches perfection a small proportion of the wine is removed and bottled to undergo tirage. The perpetual blend then continues to receive wine each vintage until again deemed perfection. This wine is made using the finest Chardonnay and Pinot Noir together with small amounts of Pinot Meunier and Pinot Gris from Drumborg,
