It melts in the mouth, revealing notes of hazelnut, caramel and sea salt. This chocolate is made with rare Arriba cacao from the Esmeraldas coast of Ecuador. Couverture chocolate has a higher percentage of cocoa butter than baking or eating chocolate. The extra cocoa butter gives it a smoother texture and glossy appearance when tempered. Pastry chefs and chocolatiers use it for
