Yeast from the area is used for fermentation. Only Pinot Noir grapes were harvested from Verzy, Montagne de Reims. After disgorgement, the wine was matured for 6 months in the cellar. On the nose, there are delicate notes of strawberries and pineapple and furthermore tropical fruits, followed by hints of spices and a yeasty, bready quality.
